Mint Kale Lemonade VIDEO RECIPE | This wonderfully refreshing and healthy drink is my version of something I ordered at one of my favourite vegetarian/vegan restaurants in Vancouver, B.C. I immediately fell in love with it and decided to create my own version! It’s so simple to make and is sure to impress even the most discriminating of guests! This drink can also be turned into a lovely cocktail by adding an ounce of vodka!! It can also be served as a spritzer by adding a bit of carbonated mineral water.

500mlor 2 cups lemonade (can also substitute orange juice)
1kale stem
Small handful of mint leaves

Remove stem and tear the kale into pieces. Add all ingredients, including ice cubes, into blender. Blend until smooth and frothy and the colour turns evenly green.

Pour into glasses; add an ice cube and a lime wedge.
