This is a super healthy and tasty muffin recipe with no refined ingredients whatsoever! My version was inspired by my neighbour, Elaine, who served these delicious muffins at our monthly neighbourhood coffee get together.
Preheat oven to 350F and prepare muffin pan (with liners or spray)
Combine dry ingredients, including hemp hearts, in medium bowl
Combine wet ingredients in large mixing bowl
Add dry ingredients into bowl with wet ingredients. Stir with spatula until combined. Do not overmix
Gently fold in blueberries
Scoop into muffin tins
Bake for 30 minutes
Cool for 10 minutes before removing from pan
