This is a super healthy and tasty Oatmeal Banana Blueberry Muffin recipe with no refined ingredients whatsoever! My version was inspired by my neighbour, Elaine, who served these delicious muffins at our monthly neighbourhood coffee get together. Her’s had chocolate chips instead of blueberries; 3 cups oats, no flour or hemp hearts. I also replaced the honey with maple syrup, and milk with buttermilk.
2cupsRolled oats
1cupSpelt or other flour of choice
1tspCinnamon
¼tspSea salt (or Himalayan salt)
1tspBaking soda
¼cupHemp hearts
2Large free range eggs
¼cupMaple syrup
1cupMashed bananas (two medium bananas)
2tspVanilla
1cupButtermilk
¼cupCoconut oil melted
1cupBlueberries

Preheat oven to 350F and prepare muffin pan (with liners or spray)

Combine dry ingredients, including hemp hearts, in medium bowl

Combine wet ingredients in large mixing bowl

Add dry ingredients into bowl with wet ingredients. Stir with spatula until combined. Do not overmix

Gently fold in blueberries

Scoop into muffin tins

Bake for 30 minutes

Cool for 10 minutes before removing from pan
Variation: Replace mashed bananas and blueberries, with applesauce and raisins (but only 1/2 cup raisins)
