Glazed Spiced Mixed Nuts — I am “nuts” about all kinds of nuts! I like them all different ways…plain, salty, spicy, sweet, nut butters. This nuts recipe is wonderful because it has a bit of everything. The fennel and chilli flakes compliment each other so well in the savoury/sweet glazed texture. My cousin makes them every year for Christmas and they are such a hit every time! The original recipe, which she found many years ago in the Vancouver Sun, uses only almonds. But I am adapting it to include a mixture of nuts, because when it comes to nuts, the more the merrier!! I think I will have to make another big batch to share with family and friends.

 ½ cup sugar
 3 tsp crushed fennel seeds
 2 tsp red pepper flakes
 2 tsp sea salt
 1 ½ cups almonds
 1 cup hazelnuts
 1 cup cashews
 ½ cup pistachios
 2 tbsp water

Preheat oven to 325F
Line a rimmed baking sheet with parchment paper.
Crush the fennel seeds with a mortar and pestle, just to break them up.

Combine sugar, fennel seeds, pepper flakes, and sea salt in a bowl. Add nuts and water, mix well.

Spread nut mixture in a single layer on prepared baking sheet. Bake at 325F (160C) for 25 to 30 minutes, stirring twice at 10 minute intervals. They should be done once the sugar is melted and the nuts are nicely glazed.

Allow to cool for at least 30 to 45 minutes. Break apart. Store in an airtight container for up to 1 week or freeze for up to 1 month.
