Gluten Free Apple Tart — When you are celiac or have a wheat/gluten intolerance, it’s very challenging to find healthy treats which aren’t loaded with sugar and other unhealthy stuff. So I receive so much joy whenever I can share healthy & easy recipes for baking gluten-free treats and desserts that don’t require a ton of different ingredients. This tart is exactly that! You don’t have to make a separate crust, it only requires a few wholesome ingredients, it’s absolutely delicious and very simple to make. It is a fabulous healthy dessert option that can be made ahead for the holidays. You can make it festive looking by sprinkling some fresh or dried cranberries on top. Make sure to warm it up just prior to serving to enjoy its lovely moist texture.

 6 tbsp melted butter or coconut oil
 3 tbsp coconut sugar (you can also use powdered sugar)
 1 ¾ cups almond flour
 3 large free range eggs, slightly beaten
 ¼ cup honey
 2 tsp pure vanilla extract
 1 tsp cinnamon
 Pinch of sea salt
 3 apples, peeled, cored and sliced into wedges
 Sliced almonds
 Amaretto liquer for brushing on top (optional)

Preheat oven to 350F degrees. Grease a 9 inch ceramic quiche dish or springform pan

In a mixing bowl combine melted butter, sugar, almond flour, eggs, honey, vanilla, cinnamon and sea salt. Mix well with a whisk until smooth. Pour into prepared pan.

Gently arrange apple slices in a circle on top of the batter, pushing them in slightly but making sure the edges are sticking out. Sprinkle with sliced almonds.

Bake for 40 - 45 minutes or until browned and set in the middle. Rotate the dish half way through to brown evenly. Brush with amaretto liquer during last 10 minutes of baking. Allow to cool for 10 - 15 minutes.

Can be served with whipped cream or vanilla gelato.
