Double Chocolate Orange Brownies — I call these brownies my “fail proof” brownies. Not only that but they are made with coconut oil and coconut sugar, as well as a WOW factor with the addition of orange zest and coconut shreds. The recipe is simple to make and the brownies come out with a beautifully moist cake-like texture.

 ¾ cup all purpose flour
 ½ cup good quality cocoa powder
 1 tsp baking powder
 ¼ tsp sea salt
 ¾ cup melted coconut oil
 1 cup coconut sugar
 2 tsp vanilla
 3 eggs (at room temperature)
 1 tbsp orange zest plus more for topping
 ½ cup dark chocolate chips
 ¼ cup sweetened coconut shreds

Preheat oven to 350F
Grease and dust with flour the bottom and sides of a 9"X9" brownie pan OR line bottom with non-stick paper.

In a large mixing bowl, beat eggs with coconut sugar until light and smooth, about 2 minutes. Add vanilla and orange zest. Mix.

In a smaller bowl combine flour, cocoa, baking powder and salt. Mix with a fork.

Add dry ingredients and melted coconut oil to the wet ingredients. Mix until batter is well blended and smooth, but don't over mix. Stir in chocolate chips.

Pour batter into pan. Sprinkle with coconut shreds and remaining orange zest. Bake for 22 to 25 minutes. Cool completely before slicing.

VARIATIONS 1. Replace eggs with 3/4 cup silken tofu 2. Sprinkle with walnuts before baking
