Yummy Chickpea Avocado Dip — Store bought dips can be tasty but they have a tendency to be high in calories and unhealthy fats. This dip is exceptionally fresh and tasty and loaded with nutritional value – vitamin C, A, plant protein, iron, fibre and healthy fats. It can be whipped up in less than 10 minutes!
1cupfrozen green chickpeas or edamame
½medium avocado
1tbsptahini
1tbspextra virgin olive oil
juice of 1/2 lemon
1clove minced garlic
salt and pepper to taste
pinch of cayenne or smoked paprika (optional)

Cook the chickpeas or edamame according to package instructions. (I cooked the green chickpeas for just 1.5 minutes in the microwave)

Put all ingredients into your mixer and process until smooth.

Serve with raw vegetables, sweet potato or potato fries, veggie chips, nachos, crostini or crackers.
