Caprese salad is such a fresh and flavourful plate to complement any meal or can be served as an entrée with a slice of baguette or savoury artisan bread. It’s is one of my “go to” salads when I don’t have a lot of time to prepare a meal. The addition of fresh basil gives it that beautiful aromatic appeal. I also like to add avocado if I happen to have a nice firm but ripe one on hand.

 2 Large ripe tomatoes
 1 Avocado
 A ball of unripened buffalo mozzerella cheese
 2 tbsp extra virgin olive oil
 3 tbsp balsamic vinegar or glaze
 Fresh basil
 Salt and pepper to taste

Slice the tomatoes into thick slices. Slice the avocado into round or long slices. Slice the cheese to have enough round pieces for each tomato slice.

Drizzle some olive oil and balsamic vinegar on a large salad plate or platter. Arrange tomato slices on plate and drizzle a little more oil and vinegar on top. Proceed layering with cheese and avocado. Drizzle more oil and vinegar. Garnish with chopped or whole basil leaves. Grind some fresh sea salt and pepper on salad before serving.
